Dishwashers

Dishwasher Basic Requirements
  • Minimum water pressure required is 500kpa
  • Pressure limiting valve may be required in high pressure areas
  • HOT water connection (65C Max) (not instantaneous, only 18lt per minute, need 30lt minute min)
  • Drain at max height 150mm for gravity waste units
General tips
  • Read the manual for model-specific requirements
  • Contact a reliable chemical company for advice on suitable detergent and rinse aid connection
  • Scrape all food scraps from plates prior to placing in the dishwasher
  • Clean filters at the end of every day with hot soapy water.
  • Wipe the inside of the dishwasher and the door seal to keep them clean
  • Check your max clearance to avoid damage to rinse arms
  • Do not overload the dishwasher to ensure best results
  • Do not use sink detergent in dishwashers
  • Use dishwasher descaler on a regular basis
  • Brita filters are available to reduce polishing times
Why will the cycle not start?
  • Check power point is turned on and plug is inserted properly
  • Check circuit fuse/breaker
  • Check power button / start button has been pressed
  • Check start button has been pressed
  • Check door is fully closed
Why is the dishwasher is leaking water?
  • Check if injector bolt inside tank is tight (normally found on inside front wall)
  • Ask plumber to check all the connections
  • Check for blockages in drain
Why is the dishwasher not responding at all?
  • Check the unit is turned on and has a power supply
  • Open and close the door firmly
  • Check if the magnetic switch has fallen out inside door
  • The door reed switch or magnet may need adjustment
  • The dishwasher must be full of water first and at the correct temperature or the unit will not start
Why is the operation of the dishwasher delayed?
  • Check the rinse cycle has finished before opening the hood (NB not all models have hoods)
  • The door may have been opened after the wash cycle and the rinse cycle did not therefore finish
  • Water temperature is too low and requires more time to heat
Why will the dishwasher not fill?
  • Check fill hose is open and not kinked or crushed (e.g. at installation). Remove dishwasher to check and feed hoses back through when pushing the washer into place
  • Check fill hose strainer (at the tap end of the hose)
  • Check dishwasher tap in cupboard for water flow
Why is the dishwasher not draining?
  • Check the plug is pulled out
  • Check the drain for blockages
  • Check drain hose is not kinked or crushed. Remove dishwasher to check and feed hoses back through when pushing back.
  • Check if the sink drain spigot has been drilled out by your installer
  • Check if filters are blocked - remove and clean if required
Why is the dishwasher overflowing?
  • Unblock breather pipe to pump with thin plastic tube (e.g. pen refill)
  • Unblock wash arms: the back pressure can cause water to come out through the door
Why is there excess foam coming from the dishwasher?
  • Ensure that the correct quantity of dishwasher detergent is being used
  • Ensure that commercial dishwasher detergent is being used and not ordinary sink detergent
  • Check if water is up to required temperature
  • Check if too much rinse aid is being used
  • Avoid pre rinsing in soapy water using ordinary detergent
Why is the dishwasher constantly running/why will the cycle not complete?
  • Check drain plug is fitting correctly otherwise it will keep trying to fill
  • Water temp may not be reached: check water is up to required temperature
  • Check filters are clean
  • Timer may be faulty, a technician may be required
Why is the dishwasher running in short bursts and then stopping?
  • Check if there is enough water coming through to the unit
  • Check if water pressure is too low- turn on a tap near the unit and if uncertain contact Fagor
Why are the plates and glasses not clean??
  • Check detergent quantity is correct with chemical supplier
  • Check that both spray arms rotate freely and are not blocked by cutlery, pots & pans or other large items
  • Check for food residue in WASH arms?
  • Empty washer and refill with clean water, especially during busiest periods
  • Check rinse-aid is being used - this is compulsory
  • Check dishwasher is loaded correctly – refer to manual

Conveyor Washers

Why is the conveyor washer not working?
  • Check there is power to the unit (check the lights are on)
  • Check the basket has sufficient weight in it to contact the conveyor ie; plastic lids are too light
  • Check limit switch on outlet bench is clear of baskets and not obstructed

Rinse Aid

What cycle does the detergent pump operate on?
  • Detergent Pump (yellow) operates on rinse cycle
Why is the rinse aid not coming through?
  • Prime the rinse aid pump by pushing the screw (remove front panel first)
  • Check the water pressure is strong enough: unit has a diaphragm that requires strong water pressure to draw up rinse aid
  • If water pressure is not strong enough, remove pressure reduction valve or open up tap all the way
  • Detergent Pump (yellow) also operates on rinse cycle

Cooking Equipment

General tips
  • Remove and refit burner bodies and burner caps if not igniting
  • Clean at regular intervals - refer to manual for model-specific details
  • Always use genuine Fagor spare parts and not cheap copies to ensure longevity
  • Fagor units have permanent pilots with flame failure fitted
General tips for gas appliances
  • Distance of gas line from incoming meter can affect the flame strength -1.1kpa required (min) measured AT EACH appliance
  • Number of appliances on manifold can reduce working pressure and affect burner performance
  • Number of bends also reduces pressure and affect burner performance
  • Only engage professional Gas technicians for installation.
  • Tip: Add up total MJ required and ADD 25% for working total

Why is the fryer not working?
  • Electronic ignition is requiredare the lights on? Check for power to the fryer at the wall and if not at the circuit board
  • Try resetting the unit – this is located behind upper control panel
Why are there problems with the gas ignition?
  • Check gas flow / regulator/ gas type etc
  • For new installations, hold Pilot in to clear out excess air in line Check burner cap is sitting flat. (Lift off and refit)

  • Check if gas is available and (for LPG) that the cylinder is not empty
  • Use a match to light the pilot
Why is the pilot going out?
  • Check if extraction system is too strong and blowing flame away from thermocouple. Flame should just lick the thermocouple
  • Check if "make up air" is forcing flame away from pilot
  • Check if the thermocouple is faulty (technician only)
Why are the burners burnt or black?
  • When cool, clean food splatters after cooking by soaking
  • LPG creates additional soot residue and require more attention when cleaning
Why is there a whistling noise from the burner?
  • Ask a technician to clean out the injectors (may have slight Burr on nozzle)
  • Adjust the regulator (up & down) while the unit has ALL flames in full position

Standard Ovens

My oven cooks unevenly?
  • Static ovens (non fan forced) require diligence on the part of the chef and regular monitoring during the baking process will require rotation of the trays for even colouration.
  • Please do not place any cooking dish / pan / bowl on the very base of the oven
Why is the oven pilot on but will not light?
  • Sit controls "lock out" if two buttons are pushed at the same time - reset by blowing out the pilot and waiting for one minute
Why do the control knobs feel too hot?
  • Oven must always be used with the door closed
  • Check if the door seal is broken
Why is there excess smoke coming from the oven?
  • Ensure oven is cleaned at regular intervals

Combi Ovens

Basic Requirements
  • Cold water must be filtered to the unit
  • Brita water filters are compulsory on all new Fagor combi ovens
  • Waste in copper with tun dish (air break)
  • Oven must be absolutely level (L-R & F-B)
  • Check breaker rating - should be 10% above the actual required (can cause the breaker to trip out)
General tips
  • Clean the oven every day – refer to the manual for model-specific information
  • Pre-heat the oven prior to use
  • Do not try to remove the heating elements for cleaning
  • Do not place any cooking dish / pan / bowl on the bottom of the oven
  • Do not cover the bottom of the oven with aluminium foil
  • Do not spray cleaners directly onto the graphics/icons
  • Only use a Fagor approved non-caustic cleaner
Why will the oven not start?
  • Check your power supply at the unit, at the wall and at the circuit board
  • Basic reset by turning power off and on
  • Evolution units require 3 mins to empty and refill the boiler on start up, please be patient
  • Refer to manual
Why is the fan noisy/rattling?
  • Check for tin foil wrapped around the fan or elements and if sae to do so, remove all obstructions
  • Request a service technician
Why is the food burnt / oven too hot?
  • Check thermostat setting
  • Check recipe
  • Check if trays are too close together and blocking air flow
  • Combi ovens are very powerful and a slight variation to your recipe temperature of up to 20°C may be required
  • Technicians check selector switch setting
Why is the oven not hot enough?
  • Check that the correct fan speed has been selected
  • Technicians check thermostat setting
  • Technicians check selector switch elements setting
Why is there uneven heat?
  • Check for uneven loading of trays or food that is not level
  • Check door seal with paper, it should stick in door quite tightly
  • Remove door latch spacers as necessary
  • Adjust door closure over time by removing door latch spacers as necessary
  • Ensure full power has been selected
Why do the oven door / knobs feel too hot?
  • Oven must always be used with the door closed
  • Check if the door seal is broken
  • Check if the cooling fan is operating
Why is there excess smoke coming from the oven?
  • Ensure oven is cleaned at regular intervals
Evolution Series Hints & tips
  • HEP-10/21 - washing cycle will not work above 60c and must not be interrupted, built in safety device prevents use during cycle
  • Manual emptying of boiler, hold SELECT & COOL DOWN for 5 seconds
What is the descaling procedure?
  • Empty boiler
  • Add chemicals- it waits for you
  • Refill with water
  • Heat to 60°C
  • Maintain for up to 120 minutes
  • Empty boiler
  • Refill boiler
How do you calculate required AMPS?
  • 24.6kw =24,600watts (divided) by 3 (phases) (divided) by 240v = 34.5 amps per phase

Refrigeration

Why is there no response at all?
  • Check if the circuit breaker has been tripped off
  • Check if the IT has tripped out on the multi power board
  • Check if water has been spilt on the control module
Please note: that counter fridges can be easily damaged during cleaning, please respect the fact that you are washing a live appliance with water Why is temperature not being held?
  • Clean dirt and dust off condenser coil
  • Check for frozen/iced-up evaporator coil
  • FDC unit may be obstructed: remove upper GN pans etc
  • Check if the door switch has failed on an upright freezer
